Making Smart Choices for Healthy Living with Splenda {Banana Chocolate Chip Muffins Recipe} #SweetSwaps

Recently I shared one way in which I attempt to combat my sweet tooth. Because as much as my taste buds would prefer to swim in a pool of sugar day after day, it is not exactly what I need in my life.

While I've gotten inspired in a number of ways from the 365 Sweet Swaps page, it was just as easy to get lost (and hungry) browsing the huge number of recipes offered on Splenda.com.

With options like these (plus many more), why wouldn't I make the smart and delicious choice to reduce the added sugar and calories in my kitchen by using Splenda Sweetener Products?

...I was prepared to reach for just about any tasty recipe in my repertoire to try swapping out the sugar for these great sweeteners.

Even better, Splenda has a full page of measurement charts that make it extremely easy to know that you're using the right amount of their products. One cup of Splenda Granulated Sweetener for every one cup of sugar? Simple. Need ¼ cup of sugar? Just reach for six Splenda packets instead. Trying out Splenda Brown Sugar Blend? Replace every one cup that your recipe calls for with ½ cup of the Blend instead.

Seeing the bananas that were past ripe on my counter, I was all set to pull out my Banana Bread recipe... but then happened to see the Banana Mini-Chip Muffins on Splenda.com first. Yes, please!

Banana Chocolate Chip Muffins

Ingredients

2 cups all-purpose flour
2 teaspoons baking powder
½ teaspoon salt
¾ cup light butter, softened
⅓ cup Splenda Sugar Blend
⅓ cup packed Splenda Brown Sugar Blend
1 teaspoon vanilla extract
3 medium ripe bananas, mashed
1 large egg
1 (12 ounce) package semi-sweet chocolate morsels

Directions

Preheat oven to 350°. Spray 24 muffin cups with nonstick cooking spray or fill with paper liners.

Combine flour, baking powder and salt in medium bowl; set aside.

Combine butter, Splenda Sugar Blend, Splenda Brown Sugar Blend and vanilla in large bowl; beat at medium speed with a mixer until creamy. Beat in bananas and egg. Gradually mix in flour mixture; stir in morsels. Spoon batter evenly into prepared pan, filling cups ⅔ full.

Bake approximately 25 minutes or until wooden pick inserted in center comes out clean. Cool 10 minutes in pans on wire rack. Remove muffins from pans to wire rack to cool completely.

These muffins turned out just as rich and delectable as I had hoped that it was no wonder that they were such a hit with the entire family. Even better, knowing that they were made with Splenda products made me extremely happy that I had created something so tasty yet with less added sugar!

I'd rather use Stevia for sweetening. I know it's just a plant since I grow it in my garden.

I didn't know that splenda made brown sugar and or mixed variety. I will have to check this out. I eat way too much sugar. I love things sweetened and I need to try this substitute. Thanks for the great review and the measurement substitutes.

I've never tried some of these Splenda products. I do sweeten with it. It is what I prefer to use and these sound so so good.
