Watermelon, Strawberry & Basil Fruit Salad {Recipe}

Even though I'm a fan of fall, I'm in denial that summer is actually over.

How did it go by so quickly?

The sunshine late into the evening, the ability to leave the house by simply throwing on a pair of sandals, and the fresh foods... particularly the delicious fruit. I'm definitely not ready to give up the fruit just yet.

So when a friend told me about a simple Fruit Salad recipe that has four ingredients (all of which I thoroughly enjoy), I had to give it a shot. The result was something extremely easy and very delicious! It's easily customizable in terms of how much is made and the ratio of the fruit included, so go ahead and make it your own...

Watermelon, Strawberry & Basil Fruit Salad

12 large chunks of watermelon
12 large strawberries
6 basil leaves
1-2 tablespoons honey (agave nectar could also be substituted)

Ready for easy?

Dice the watermelon...

Dice the strawberries...

Mince the basil...

And toss it all in a bowl with the honey (I found that dicing the watermelon first and letting it sit allowed me to drain some of the excess juice off before adding it to the other ingredients).

Serve and enjoy!

This fruit salad is delicious on its own, with lettuce (as pictured at the top) or scooped up as salsa, particularly with cinnamon crisps or something similar. I love the way the flavors blend together, yet with each bite I can taste the sweetness of the individual ingredients.

The calendar and the fact that the heat just kicked on in my house might indicate fall, but I'm not giving in yet!

I'd like to have this salad as a last hurrah to summer, even though fall has just officially started. These fruits are still in peak ripeness at whole foods, and the basil, too! Yum!
